Bajra rotis have fed Indian families through the coldest winters for generations — warming, iron-rich and deeply satisfying. But because pearl millet has no gluten, the dough behaves nothing like wheat. Here's the simple method our grandmothers used to get rotis that stay soft and never crack.
The secret isn't a special skill. It's three things: warm water, a proper rest, and pressing the roti gently with your palm rather than rolling it thin. Get those right and bajra becomes one of the easiest flours to work with.
You'll need: 2 cups ThinkFlour Bajra Flour · warm water · a pinch of salt (optional) · ghee to serve.
Step by step
- Warm the water. Bajra binds far better with warm — almost hot — water than cold. Boil the kettle and let it sit for a minute.
- Mix little by little. Add warm water to the flour a splash at a time, mixing with a spoon until it's cool enough to bring together by hand.
- Knead and rest. Knead into a smooth, firm dough for a couple of minutes. Cover and let it rest for 10 minutes — this is what keeps the roti from cracking.
- Press, don't roll. Take a lemon-sized ball and pat it into a circle between your palms, or press it on a sheet of parchment. Keep the edges thick.
- Cook on a hot tawa. Cook on medium-high, flipping once each side is speckled, then finish directly over the flame or with a little ghee until it puffs.
Tip: If the edges still crack, your dough is a touch dry — wet your palms and knead again for thirty seconds. Bajra dough should feel soft and slightly tacky, never stiff.
